Red Velvet Cookies


                       


Hey guys! I just tried a new recipe and I love it. I have never made red velvet cookies but they turned out pretty good. So I wanted to share the recipe with you. By the way I took this recipe from a cooking app named Yummly and the woman that shared this recipe on the app is Holly Lofthouse (click here to see her blog). So here is the recipe.

Preparation time: 40 minutes

Cooking time: 8-9 minutes per tray

Servings: On the blog it says 36 servings but I actually had 60. Oups!


Ingredients:

2 1/4 cups all-purpose flour
2 1/2 tablespoons cocoa powder 
1 1/2 teaspoons cornstarch 
3/4 teaspoon baking soda 
1/2 teaspoon salt 
7 tablespoons butter, at room temperature 
6 tablespoons vegetable shortening, at room temperature 
1 1/2 cups granulated sugar 
1 large egg
1 large egg yolk 
1 teaspoon white vinegar 
1 1/2 teaspoons vanilla extract 
1 tablespoon vanilla extract 
1 tablespoon red food coloring 
1 1/3 cups white chocolate chips

Directions:

1- Preheat oven to 375 degrees F ( 190  degrees C ). In a medium bowl, mix together the flour,cocoa powder,cornstarch,baking soda and salt. Set aside.

2-Add butter,vegetable shortening and sugar to the bowl. Mix with an electric mixer on medium speed until very fluffy,for about 3 or so minutes. Add egg, egg yolk and mix until combined. Then add vinegar,vanilla and food coloring. Mix until well blended.

3- Slowly add dry ingredients and mix until just combined. Stir in 1/2 cup of white chocolate chips. Scoop dough out by the heaping Tablespoonful, and roll into balls. Place them on a parchment lined baking sheet. Gently press about 4-5 more white chocolate chips into the top of each cookie ball (I didn't do this part because mine were a little bit too small). Being careful not to flatten the cookie balls.

4- Bake cookies for 8-9 minutes. Allow cookies to cool for a few minutes. And enjoy!
